"Remise" has several distinct meanings: As a noun, it can mean either

  1. (music) The repetition or return of the opening material later in a composition.
  2. (Fencing) A renewal of a failed action, without withdrawing the arm.

as a verb it means: To surrender all interest in a property by executing a deed, to quitclaim.

As a fencer, I'd choose to use remise in that context: I avoided his parry, and hit him with my remise. In music, there is an excellent example of the remise in Beethoven's 5th symphony, where the opening notes are repeated throughout the first movement.
