As far as I know rodents' (And rabbits') teeth continues to grow infinitely, they have to eat something harder to keep them not chewing things, or literally, they are trimming their teeth so it doesn't get too long. :D

I have about 5 Crittertrail hamster cages from my late hamster Is it okay to use them for 2 gerbils And how much do gerbils cost?

No, don't use crittertrail cages with gerbils. Unlike hamsters, gerbils are chewing machines. They can ingest the plastic which can kill them, and by chewing the plastic they can escape. I would use a 10 gallon tank instead. Gerbils cost around $10 each from a pet shop.
