You need a stable for your horse because the horse cannot simply live out at grass for their entire life. In the case of emergencies the horse may need o be stabled, and when the weather becomes too cold in winter the horse will need somewhere to stay. If the horse is in work, it is not good to keep him out at grass all the time, as he may tire himself out, or be hard to catch, as he would associate coming out of the field with work. A horse can be kept out at night, and can be turned out for an hour or two during the day, but it is bad to keep him out at grass 24/7 as too much grass can be bad for your horse's stomach. Fields need to be maintained, and if you have no where to put your horse, he may eat something poisonous to him as a result of poor field maintenance.
The above answer is wrong. Horses should actually be on pasture 24/7. Horses are perfectly capable of keeping themselves warm, and they will not tire themselves out because horses are smarter than that. They don't tire themselves out in case of danger, so that if danger does arise, they have plenty of energy to escape. And with good training a horse is easy to catch. And horse's digestive system was designed for eating grass constantly, not grain or whatever else we feed them, so pasture is the healthiest meal for them since it is what they have lived on for centuries and centuries. And horses will not eat anything poisonous if they have enough good healthy grass to eat. Honestly, you do not need horse stables if you keep horses in a natural state (without shoes, clipping, stalls and blankets) because they are perfectly capable of taking care of themselves, regardless of breed or how much we have changed them from wild horses, because as of yet they are still capable of living like wild horses.
I know from experience. My horses live naturally, with no blankets, clipping (other than bridle paths), stalls and no shoes. They are thriving living in a natural state. They are healthier than stall kept horses, I can tell you that much. They don't have stalls letting them breathe in unhealthy amounts of carbon dioxide, and they get a good amount of excercise whether we can ride them or not. My horses are easy to catch, never too tired because they keep themselves fit running around every day, and have a healthy natural diet of grass. Horses are better off without stalls and boarded in natural boarding.

Draft horses were and still are used to plow fields for crops. Plowing is much more efficient with a horse pulling a plow instead of people.
Horses are also the original 'all terrain vehicle' they can often go into areas where humans on foot and vehicles cannot. This is what allowed humans to spread as far and wide as we have today.
