In most horse shows, you'd salute when you enter and exit the show arena. Saluting is most common in dressage. The salute itself is actually very simple. Halt your horse in front of the judge, keeping eye contact. Then, put your reins in one hand and drop the other hand to your side behind the thigh. Your fingers on the free hand should be pointing downwards. Once you've done this, you simply nod your head at the judge. After the judge acknowledges you (usually by sitting down) you begin the test.
