Whether God created the world in six days, or even whether God created the world at all, depends on what you wish to believe. The first creation story in Genesis (verses 1:1-2:4a) describe a six-day creation, although the earth is pre-existing. The second creation story in Genesis (verses 2:4b-25) does not require creation to have taken six days, although pious readers, believing that the text cannot contain contradictions, ignore the major disjunctions between the two creation stories and tend to treat the second story as the fuller, more detailed account of the creation of man (and woman) that the first story simply reported.

One Answer
Carefully reading the opening chapter of Genesis will reveal that the Earth is already there in darkness and under water. So the Genesis account is not describing the initial creation but rather the 'renewal' of the face of the Earth and the creation of our current plant and animal life - with man at the pinnacle position.
Psalm 104:30 (New King James Version - NKJV): You send forth Your Spirit, they are created; And You renew the face of the earth.
Job 38:7 (read all as it describes the original creation) New King James Version (NKJV): When the morning stars sang together, And all the sons of God shouted for joy?
Another Answer
Science can not accept either creation story, simply because the evidence of what really happened can not be equated with either story. So, from a scientific perspective, there was no six-day creation.
Yes, that is what tradition states (Genesis ch.1-2). Some religious people interpret the "days" as epochs of time, but this approach is non-traditional, departing from the verses themselves. Note that there is plenty of evidence for a young Earth (and against Evolution in general). Understanding Genesis literally need not be seen as problematic.

The first narrative (not "story") in Genesis is God's creation of the universe. This subject is contained in the first two chapters of Genesis, with chapter 1 giving a brief overview and ch.2 getting down to detail (Rashi commentary, Gen.2:8).While Judaism has always seen the Torah as an intricate tapestry that nonetheless had one Divine source, some modern authors such as Wellhausen (the father of modern Biblical-criticism, 1844-1918) have suggested artificially chopping up the narrative and attributing it to various authors, despite the Torah's explicit statement as to its provenance (Exodus 24:12, Deuteronomy 31:24). His claims have been debunked one by one, as Archaeology and other disciplines have demonstrated the integrity of the Torah. No fragments have ever been found that would support his Documentary Hypothesis, which remains nothing more than an arbitrary claim:

Jewish answer: God could have created everything in an instant. He chose to do it over a period of days in order to teach us the importance of this world (Mishna, Avot ch.5). According to Jewish mysticism, God used six days because He created this world as a sort of projection of spiritual energy through the closest of the upper worlds, which are seven in number (the seventh representing the Sabbath of rest).
He's God... He made the world is seven days because he is so powerful. Read the Bible... ;)
The answer to your question is summed in the first verse of the Bible, Genesis 1:1: "In the beginning, God created the heavens and the earth." Christians believe that God created everything in seven days (if you interpret the Bible literally).
