There are two versions of this, an acute deficiency and a chronic deficiency. Dogs tend to develop a spastic paralysis, in which their legs are extended and rigid, as well as increased respiratory rate.

The chronic form will eventually manifest itself with pathologic fractures of a great number of bones, although by this time the damage is sometimes so great that there is little to be done to reverse the damage. In young animals this is called ricketts and is usually due to a genetic inability to process calcium and deposit it into their bones. In old animals this is called osteoporosis and is usually due to insufficient dietary calcium, which is extremely rare due to careful formulation of the commercial dog foods.
