It would be hard, since dogs originate from wolves and coyotes etc. they're meant to eat meat and turning them into vegetarians would be trying to change the way a dog's system is designed. They can eat certain vegetables but they shouldn't live on them alone and it shouldn't be the main part of their diet.

Dogs are carnivores, and do best on a diet of meat. It's possible to feed them vegetable products and a lot of commercial dog foods are mainly derived from plant sources. But no, in nature they are not even slightly vegetarian, or even omnivorous.
