It is not so much that they like you or not. Some are just better at being handheld because they have experienced it from an early age (after their eyes open). If you bought an older gerbil from a petstore that has not be regularly handled, it may not ever be a good pet.
Gerbils may not get sad... they can become sick, if your gerbil stops eating for a day or so he may be sick. if they are sad they tend to sit in the corner with their eyes closed.
If when you approach the cage it doesn't hide or run away from your hand, and isn't afraid to climb on you.
