Some do, some don't!! You need to have a lot of patience and sit with you hand in their cage so they get used to you. Dont try to pick them up just let them approach you and with time they will investigate further until they realise you arent a threat and will sit on your hand. It is easy to encourage a gerbil to you by placing food in your hand so they come to you to get it and associate you with nice treats, unfortunately they also learn to associate your hand with food and you could get nibbled. You will know the difference between an exploratory nibble and an aggressive bite though, a bite will draw blood and hurt a lot, a nibble wont.
I have two gerbils one will happily sit on my hand, one wont, he will come up to me and eat from my hand but wont sit on me - they have been brought up together identically by me since they were babies - it is down to their individual personalities.
Never pick a gerbil up by the end of its tail, if you are going to pick it up by its tail grip the base where it joins to the body and support the gerbil by putting your other hand underneath its body as you lift it. I find the best way to pick up my gerb (that likes being held) is to cup him in both my hands so he is fully enclosed and feels safe within my hands to get him out of his cage,and then let him run around all over me, they especially like dressing gowns or jumpers with big sleeves to hide in. Hold gerbils so your hands are making a tunnel shape as they naturally run through tunnels, hold them firmly but not tightly, don't squeeze them.
Most pets are okay with being held but dont particualy like it. The pets which love being held are: rats, mice, some hamsters. The pets which are okay being held are: guineapigs,some snakes and lizards. The pets which dont like being held are: chinchillas, most rabbits, ferrets, degu's I would advise syrian hamsters for first time pets :)

because they are very nice and friendly. they like to be held and they like attention :) I have 3 rats, they are very good and cute pets to have!
Guinea pigs like to be held, they are friendly creatures. Rats are interesting to watch but they only tolerate being held, they don't care for it much.

I think i found rats to be very agreeable and love everything! Maybe they don't like stupid people ! Most rats don't like water or being picked up by their tail (as it can tear and fall off - ouch)
