Yeah, it's usually quite difficult for them, but if a fox can roll the hedgehog over when it's curled up it can get to it.

It's a bit painful for the fox though so they don't usually bother!

No, fennecs live in Africa. Jackrabbits live in North America. They never meet. Besides. a jackrabbit would be too big for a fennec to take down.
