They speak mostly German however there are many different types of German but for the most part they break down into two main dialects which are High German and Low German.
All the different types of German will fit into these two parent dialects. For example Standard German and Yiddish are both sub-divisions of High German. High German dialects are spoken in Central and Southern Germany.
Low German also known as Low Saxon spoken in the Northern areas of Germanic Europe and is pretty much the parent language for Dutch and the Netherlands dialects.
To be honest tracking down and understanding how many different versions of German there are can be maddening and then fitting them into their parent dialect (High or Low German) goes from maddening to down right insane but I hope I managed to give you some what the answer you were looking for.
However Germans and Germanic people also tend to speak flawless English so if you ever go to Germany either take the time to learn to speak German fluently as the Germans like precision and perfection in speaking a language or just simply speak English which Germans love to show off their prowess in speaking.
