Fire department connections are actually used in fire sprinkler systems.When any fire occurs water is discharged from the sprinkler heads that have fused, and are discharging water to supress and extinguish the fire. The fire department connection is used by the fire department to add to the water supply to the sprinklers and/or charge the interior hydrant connection withn the building (if any).

Stortz connections are used to connected lengths of fire department water supply hose, or to connect a fire pumper to a structure's sprinkler and/or standpipe system. They provide a 1/4 turn 'sexless' connection, which is normally faster and easier to complete than a threaded coupling. The type of connection used to supply a structure is regulated by the fire code that applies to the jusisdiction where the structure is located. Designers and engineers should consult with their local Fire Marshal to determine the correct type of connection for their local. Using this type of connection for fire department supply hose depends on the standard operating procedures for hose in place at the fire department. Designers and engineers should conact their Fire Chief's office to determine these procedures.
A dry standpipe is a system of pipes with fire hose connection outlets inside a building, but it only has water in it when needed, as opposed to a wet standpipe in which water is always present at the hose-connection valves. There may optionally be a hose connected at some of the valve outlets for use by occupants before the fire department arrives with their own hoses. Water can either be pumped in from a fire department connection (FDC) on the outside of the building, or can be supplied by other pressurized water supply, but in a dry-pipe system, the valve is not opened until water is needed. An "automatic-dry" standpipe normally contains only pressurized air and valves sensors open the main water valve when the air pressure drops (i.e., someone opens a valve). A "manual-dry" system requires an external source of water and pressure, fed into the FDC. Note that these are not approved under Canadian building and fire codes. NFPA 14 has more information about the standards for standpipes.

There is two kind of water supply to fire department one is called hydrant which is there on the ground and other is called landing valve which should be there in all the floor where we cant install hydrant. Its a simple valve like aur water tab when you open it you'll get water so the fire department people connect there water hose to that valve to get water to extinguish fire. The normal pressure shuld be 65 psi. Ex: If there is 11 storey builing then there should be one hydrent on the ground floor and 10 landing valve one on each floor.
