Definitely thank them for the opportunity and the experience you gained. Then list out two or three specific points that you found interesting and learned. I'm not sure how old you are or if you are able to work there but let them know you might be interested in future employment or volunteer opportunities as needed.

Be sure to hand write it, makes it more personable. It doesn't need to be too long just summarize your week and pull the best pieces for your letter.
