You will need to take all the courses required for college entrance. Science courses will be especially helpful if you want to go into a forensic specialty. If your school has anthropology and Photography, those will help develop your skills in observation.

You can take a diploma in the science subjects, which is considered a high school equivalent (eg IB diploma). This would allow you to meet entrance requirements at most universities.
At my high school the only subjects to do with being a chef is food tchnology but to check if there is any others at your school i would ask a teacher.

High school is supposed to prepare you for college. College is supposed to prepare you for the real world. Even if in the furture you will not be doing as much math, you will have the ability to think critically.
