"Manual" means "with the hands", as it comes from the Latin word for the hand, "manus". A manual job is therefore one which involves using the strength of your hands: a carpenter using a hammer, a plumber using a wrench, digging with a shovel and so forth. Even though you use your hands to type, typing is not considered to be a manual job. Nor are other "hands-on" jobs requiring more skill than strength: surgery, for example, or making hand-made lace.
