No. They don't have exactly 100 legs. It depends on the species; centipedes can have up to 15 pairs of legs to a 180. Because they're called 'centipedes' doesn't mean that they have to have 100 legs. It's the same with millipedes, they can have up to 200 pairs.

No, although 'centi' means 100, no species have been found with that many legs, all centipedes have one pair of legs for each body segment, the largest is the Geophilomorpha with 29 segments or 58 legs.

Yes, some do. Hatchlings have fewer legs than adults of the same species and some species have more legs than other species. Instead of counting all their legs, count the number of legs per body segment. A centipede will have a pair of legs on each segment.
