They are not lying. Some kids never do figure out that "Santa Claus" is really their own parents! The part about the red suit, whiskers, elves, reindeer, sleigh, and chimneys is all made up information from a book called, "A Visit from St Nicklaus" by Rev. Clement Moore. Parents want their young kids to have the fun of "Santa Claus" bringing presents to kids. So, Yes, Virginia, there is a Santa Claus. (From an old newspaper column).
Of course, these days, we call that book, "'Twas the Night Before Christmas"
By the way, if you say Saint Nicklaus fast, you get Sant Ni Klaus, or SantniClaus, or simply, Santa Claus.
('Sant' is how the French say, 'Saint', by the way.)
If you mean lie by telling them the Easter Bunny exists, then yes, parents do tell their children that harmless lie, just as their parents did before them.
It brings a sense of innocence and enjoyment in childhood so that when the child grows, they are appreciative of the moments when they were young and all they believe in was true to them, even if only for a little while.
Parents do not want to lie to their kids about things such as the Easter Bunny, the Tooth Fairy and Santa Claus but the reason why they opt to do the lying is because they want kids to have hope in things that other people might not have hope in.

Rabbits and hares were originally part of pre-Christian pagan fertility lore. The earliest record of an Easter bunny story appears to have originated in Germany, where it appeared in writings in the 1500s. As a symbol of bringing Easter eggs, the origins appear to be in Alsace and the Upper Rhineland. For more information, visit the Related Question.
