Candles are used on the day of the dead to guide the deceased spirit to the family altar (which is either in the home, or in the cemetary). Also, they are simply used for light in the cemetary. Some families stay for just a while, and eat, drink and talk. Some families stay until dawn.

At the altar are things that the deceased person loved, and things that give them comfort. Popular items include food, drinks, decorative bread, and even water and hand towels to freshen up with.

Another powerful symbol of this day (and similar in use to the candles) is the marigold flowers. When the altar is located at the gravesite, the spirit will first go to the family home. That is after all, where they lived during their life. they will then follow the path of marigold petals to the grave to join the family (because they don't know where they are buried -- the burial happens after death).
