In Western Europe, there was no standard age for beginning education. Most children in the Middle Ages were probably not educated. Those who went to school were probably educated for a while before they went. In the Byzantine Empire, there was a system of primary education, but its purpose was to see that all soldiers were literate. I do not know when peoples started into it. We do not have a lot of information on the education of children, but it is a matter of record that Matilda of Scotland, who was born in 1080 and was the daughter of King Malcolm III and St. Margaret, started her education in an abbey school at the age of six. We also know that Hildegard of Bingen was probably sent to a convent, where she was formally educated, at the age of eight. There are links below.
The Romans educated children whose families could afford the fees charged buy the Gramanticus. Rome did not have a state education system. Teachers run classes for a fee. The litterators run classes for children up to the age of 10-12 and children learnt to read, write and basic maths. Children of families who could afford it went on to study until the age of a grammaticus until the age of 14-15
On the Plantation, some slaves would have started work at the age of about four as a child-minder. They would usually start running errands and carrying water to the other slaves at the age of five and they would have been expected to work on the plantation at the age of seven or eight.
There is not a lot of recorded history about child labor in the Middle Ages, but we do know that they started as apprentices at about the age of seven. Most children were not apprentices, but were of the laboring class of serfs, who had no particular need for specialized training. The children who lived on farms probably started working at a younger age. The Wikipedia article on Childhood as the following quote at the beginning of the section on the history of childhood: "It has been argued that childhood is not a natural phenomenon but a creation of society." This is much more a comment on our times than on the Middle Ages, but it is something to keep in mind when studying other times and places. There is a link below.
