It wasn't that easy! By the time the Holocaust started (1941) most of the Jews had already been herded into ghettos and were closely guarded. Others were by then under close surveillance.
Plus, traveling wasn't that easy back them. The Jews had a compromise to Germany. They's lived there for over 2 or three thousand years. And what year is it? Oh, yeah...2011...
In the period from 1933-1939 (and even 1941) many Jews did try to leave Germany and succeeded. It wasn't easy, as they needed somewhere (and if possible someone) to go to. By 1939, so many Jewish refugees had left, most countries closed their doors to this huge influx. Visa's were difficult an expensive for Jews to get.
Many were too old to travel. Dr. Sigmund Freud left, but all of his sisters remained behind. Some tragically stayed behind to take care of ailing parents. Some were too poor to pay the cost of the travel, and to also pay someone to get them a visa to a new country.

Becasue the couldn't; they where trapped and they had to hide.
Additionally, many countries did not want to take Jewish refugees. Countries as vastly different as the United States and Switzerland both rejected numerous Jewish refugees. Other countries had very small Immigration quotas. This is one of the main reasons why Zionists have said that Israel is necessary: so that Jews will have a place that they can flee to when Anti-Semitism strikes. Jews from Arab countries, Jews from Russia, Jews from Argentina, and numerous other countries have taken advantage of Israel in this way when their countries of origin became intolerable - an option Jews during the Holocaust did not have.

2) The full Horror of what the Nazis intended to do to the Jews was kept secret, even as the killings got underway.
3) Europe was a battlefield. There were zero civilian flights, shipping ports were largely inaccessible, and the whole continent was called "Fortress Europe" because it was closed in.
4) There was a lot of poverty.
5) To travel, papers would have to be presented, meaning that the name and background of the traveler would be seen and he/she would be liable to be taken by the Nazis, who controlled the goings-on in Europe.
6) A number of countries, like Switzerland required Jews to identify themselves on their passports and would refuse entry to Jews fleeing from the Nazis.
7) Jews never thought that their neighbors could so easily desert them.
