Onions are classified into two categories. Green onions or scallions and dry onions, which are mature onions. There are many varieties of onions and range from red to white to yellow. Some are classified by the pungency, hot and mild. Because onions are being hybridized it would be hard to know how many kinds there are.
Sometimes called purple onions, these medium-to-large-sized mild-to-sweet-flavored onions have three famous homes: Turda in Romania, Tropea in Italy, and Wethersfield, in the state of Connecticut in the US.
Onions contain sulfur compounds that are released when they are cut or crushed. These compounds can be volatile and have a pungent odor. While some people may find the smell of onions unpleasant, others may enjoy it as it adds depth of flavor to many dishes.

Vidalia onions are a type of sweet onion grown in Georgia. They are Vidalia onions only because of the area they are grown in, near Vidalia, Georgia. However the onions grown in the area are unusually sweet due to low sulfur in the soil.
