It seems as if every time it's mentioned, all they say is "fermented fish sauce", or that it can be flavored. From the lack of info about it, I assume that they could use any type of dead fish. Perhaps someone can improve this answer with a specific about the fish.

However there is one item that was universally used on the ancient Roman table and that was the fish sauce called "garum'. Rich, poor and in between used it and there was even Kosher garum amphorae found in the ruins of Pompeii.
