If you are refering specifically to the Holocaust, then you have two gasses used for poisoning; carbonmonoxide and zyclon-b. enviromental conditions would change the effectivness, like temperature, humidity, whether the room was airtight. As a rough guide; Zyclon-b would take about fifteen minutes and carbon monoxide a bit longer.
