All food will break down overtime as micro organisms go to work. At normal room temperature, the bacteria thrive, and depending on the food, they will multiply quickly to dangerous levels. By freezing the food, the micro organisms don't die, but they will multiply at much slower rates, meaning the food will keep longer.
