Don't worry, you will get all your items through the progress of the game. For each new area you visit with a weapons store, you can buy new and stronger weapons based on the story mode progress. More weapons unlock as you progress through the main story missions - typically if a new weapon features in a main mission (ie the Sniper Rifle, Jerry Can and Sticky Bombs during Trevor's early missions) then they will unlock at Ammu-nation after the mission is completed.
