Generally yes if its a real dairy shake (many are not). Even though a food may contain primarily gluten free ingredients, there is a strong potential for cross contamination. In general dairy is acceptable for a gluten free diet. You have to be careful with products like yogurt, cottage cheese, and cheese spreads since some may contain gluten. Be especially watchful for modified food starch, which is often found in processed foods. Unless it specifically states that it is from corn, avoid it.
Many people who need to eat gluten free are also lactose intolerant. In that case, I would advise avoiding dairy.
There is a high chance that people on the gluten-free diet are also lactose intolerant (especially if you have Celiac Disease), but unless your doctor says you can't, normal gluten-free milk is fine to drink.
If you need to eat things that are gluten-free then you can buy and eat certain products under gluten-free categories. Most vegan restaurants are gluten-free.
