On house, why might a pyramid-shape roof be better than a flat roof?
Neither is "better" in terms of usefulness or structural efficiency. Hip and gable are primarily responses to design needs. A hip roof is slightly stronger than a gable.
A raked ceiling or cathedral ceiling is said to be better than a flat ceiling because of the echos in the rooms. It will really be up to the owner of the house and what they prefer.
This would depend entirely on the definition of flat, and its origin. Flat rooofs are not flat, and all should have enough slope to run water, generaly 1 to 2% minimum. In our area a flat roof is defined as any roof with less than 3:12 pitch and must have Ice and Water shield or other equivelant materials installed to prevent damage. Usually up to and including a 2:12 Pitch can be protected with a Build Up Roofing system or BUR roof. Another usual material is what we call a Single Ply or Membrane roof. These materials are like a big rubber inner tube being pulled over the roof and can be attached with ballast (rock) or mechanically.
