They can. It is just a lot more difficult than with gases. Solids cannot be compressed at all.
Liquids cannot be compressed because when a force is applied the liquid particles have no room between they to move around, whereas gas particles are free to move because they have a lots of room between them to move around in.

liquid cant be compressed as the particles are able to move freely so are incapable of being pressed into a certain shape or size

In a liquid all the molecules are in contact already so there is no space for them to move into unlike a gas which is has free floating atoms.
