All fossil found to date were missing link. Missing link is a non-scientific term describe new found transitional fossil. Any single fossil found and placed along the line of evolution would yield 2 new missing link mathematically.

I assume you mean the oldest horse as in the oldest horse found in the fossil records. Eohippus was roughly the size of a modern day fox, it was due to it's environment and diet. Eohippus was a browser in the beginning and had multiple toes to walk easily over the marshy ground of it's forest environment. The smaller size would have enabled it to run and hide in the forest far more easily than a larger animal could. As the environment changed so did Eohippus, eventually evolving into a much larger animal over time.

No, not all fossils can be found in Omega Ruby or Alpha Sapphire however the fossils that can be found would include the Dome Fossil also known as the Kabuto fossil, Plume Fossil which is the Archen fossil and Armor Fossil which is also the Shieldon fossil can be found in Omega Ruby, the Skull Fossil also known as the Cranidos fossil and Cover Fossil (also known as the Tirtouga fossil) can be found in Alpha Sapphire while the Old Amber Fossil which is the Aerodactyl fossil can be found in both Omega Ruby and Alpha Sapphire.
