Physical state in science means how the object is represented at a given temperature. There are 4 phases, but only 3 of which we really see. Solid, liquid, and gas are the 3 major phases, and at times we can see plasma. But a physical state depends on pressure and temperature and how particles within a molecule or element are closely or loosely packed together creating those different phases.

But in short, it is whether an object is solid, liquid, or a gas at any given moment in time.
