Captain America's costume in the comic books included scale-mail or ring-mail (rather than chainmail). This would help to protect his upper torso from knife and other weapon attacks, but would not be bullet-proof. He would, as medieval knights did, also need padded leather or woollen layers underneath to absorb the impact from heavier blows.
