Thestrals are like the slightly darker (and much more gentle) version of a pegasus. They are roughly horses, but they have wings and can fly. Thestrals are said to be very clever at finding where their rider wants to go, even without specific instructions! Thestrals are considered dark creatures by many because of the negative conotations attached to them. (People think it's evil that the only way to see them is after having watched a person die first!) In the movies, their wings are leathery and they have a little bit of a thin, dragonish look to them, but still are quite beautiful.

One could only as J.K. Rowling that to get a satisfactory answer. My guess is that it was never really important to the story line. EG - Harry could not kill Voldemort without the core of the wand being thestral. Not true. It just was never that important as far as the plot goes.
