The white stuff floating in milk is bits of fat. There are a couple of reasons why this can happen:

- Poor homogenisation leads to flocculation (bits of fat clumping together and floating)

- Spoilage of milk (lowered pH breaks some protein bonds leading to lumps of fat)

Flocculation can happen easily in long life milk as the extended shelf life allows more time for fat globules to aggregate and stick together.

Although many of the substances in milk appear white when dry, none of them are actually white. Even titanium dioxide, one of the best "white" pigments, isn't white; it's clear. It appears white for the same reason snow appears white. Both scatter the entire visible light spectrum evenly. Further, white does not exist in the natural world. Rather, it is a construct of our eyes and brain.

Thus, fats, sugars, and proteins are all clear. Sugar in the sugar bowl and salt in the shaker appear white because their crystalline structures scatter the visible light spectrum evenly. Snow and clouds appear white for the same reason. Snow and clouds are made of water, yet who would claim that water is white?

All of the substances in milk are clear, except for vitamin A, which has a slight yellowish tinge.

So, why is milk white?

Milk appears to be white because the dissolved substances in milk scatter the entire light spectrum evenly - creating the optical illusion we call white.

Nothing makes the milk turn white - that is just how it naturally is produced.

Is it normal to leak milk?

Do you mean in your body or a milk carton? As I know from experience your body shouldn't be leaking white stuff. If it is a carton or container of milk it is O.K. as it will evaporate and reform around the container. Or it may be a hole.

How can you tell if milk is bad?

First, you could try smelling it. It would smell bad if the milk is bad. Second, you could look in the milk, and if you see white, floating specks just floating around the top of the milk, then that is a sign it is bad. No white floating specks means that the milk is good to drink. Third, you could also look at the 'sell by' or expiration date on the carton, and either is the last day that milk could be drunk. Smell it, if it doesn't smell sour its good. Milk usually lasts a week after its expiration date.
