I don't agree with the above answer because the cakes I've purchased in plastic pans are stuck to the pan and also some batter bakes over the center cone. However, I too have wondered and do not know the answer to the question.
The special pan is necessary for angel-food cake because the cake rises quite high and needs the support of tall sides. It also needs to bake from the center as well as from the sides, which is why a tube pan is used.
That is simply just the way it was designed and the idea of how the cake should look like, almost like a signature feature.
