To make a rissotto creamy you simply add more butter, a bit more cheese and then if you wish a bit of milk in the mixture. But not too much as it will make the rissotto taste foul

I recommend you drink whatever milk you think tastes the best. If you are not overweight, you can have any kind. Whole milk is my favorite, it is creamy and good. It has 4% fat though, which is higher than other milks. 2% is not bad, less creamy but half the fat. This is a happy medium between reduced fat and taste. 1% and skim milk taste the most watery. I do not like them at all. But, they have little to no fat. Again, if you do not have weight problems, any of these milk choices is fine. its proven drink 1% but mostly it doesnt matter if your not overwieght!
I wouldn't use skim milk. Partly because of it texture compared to like creams and 2 percents. I mean you can use skim milk it just wont taste as good and it wont be as creamy or thick as it would b e if you use a thicker millk :)
