in England the standard is 75 deg although you can change it if you are at a lower temp for a longer time but all countries have there own guideline's in the catering world its law to reach that temp so as to eliminate bacteria. hope helps

To homogenize it. This means that it is heated too hot for any bacteria to live it it so that it can be stored for long periods of time and it will still be fresh
