Why, well blood could get onto/into your food mixture and trust me, it would give your food a who;e different flavouring

If the cut is bleeding or not, you could contaminate the food and make people sick or the food could get in your cut and make you very sick. This is ESPECIALLY important when working with raw meat but you should always clean and cover a cut before you continue cooking and discard anything that might have been touched by the cut.
