The skin on the sausage is pretty much sealing the moisture of the sausage inside.

When you heat it in a fryingpan, then sooner or later the moisture inside the sausage will go beyond boiling point and give off steam.

As the liquids and juices inside the sausage heat up, they expand. Eventually, they expand so much that they can't be contained within the sausage. At this point, they force their way out of the sausage as both gas and liquid. This results in the splitting of the sausage.
