The large crater, is the air sack, used when the fertile chick develops lungs and needs air, but the air is limited, so the chick breaks out. The yolk (the yellow thing inside the white) is the newly hatched chicks food source, and the white would have been the embryo. Therefore, the enzymes have nothing to do with it.
