Any food is okay when frozen, it preserves the food. Only if it is stored properly (in a completely sealed and air sucked out of, ziploc bag <-- reccomendation) though. I'm sure they will be okay, just not as fresh. Yet again, I would recommend eating either fresh veggies/carrots or even canned carrots would most likely be better than frozen carrots.
