Late May and early June are the best time for rhubarb, though it continues to grow all summer. The older and larger the stalks, the tarter and tougher they are. I prefer them no bigger around than a pencil but have harvested them up to an inch and a half. When they get that big, cook them down and make rhubarb syrup.

Rhubarb is only picked in the Spring. So you should stop by the end of June so as not to kill it.

All depends when it was planted and what part of the world you live in. If the plant has matured, select three of the largest stalks, wait for the leaves to open and pull May to August
