I am going to try to find out. I am doing this for a 5th grade science project. But what my guess is that if you take something small out like the sugar I guess it will be fine but if you take something big out like mile or anything like that the cookie will taste bad and it would not be like a cookie anymore. It would just not be the same. I think you guys should try to find out and then after add on to me guess. I am going to try to do that. But if I cant I want you to. It would be fun.

If you remove an ingredient from a cookie, it may have undesirable results.

Sugar - If you remove the sugar, it won't be sweet, and the consistency will change. It may taste like some type of bread.

Flavoring - If just remove a flavoring like nuts or Chocolate Chips, you just won't have that flavor.

Flour - If the recipe requires flour and you omit that, there won't be as much batter, the texture will be wrong, the batter will be runny, and it will likely burn and stick when you try to bake it.

Eggs - Removing any eggs would make it harder and more crumbly.

Does adding an ingredient change the texture of a cookie?

Taste at least, but baking is basically chemistry, if you don't add in the essential ingredients, or add them in at the wrong time, or using the wrong method, it will have a variety of effects on the composition of the cookie itself. For example, no flour would mean it would just be butter, eggs, and sugar. That would be a disgusting burnt mess in the oven.
