4 Baking potatoes

½ C. Celery

1 can chicken broth

½ C. chopped green onions

1 ½ C Milk

8 oz Sour Cream

Grated Cheddar Cheese

4-8 Slices of Cooked bacon (reserve drippings)

Bake potatoes, peel and MASH with fork or potato masher but leave some clumps. You don't want it to be smooth. Add potatoes, broth, celery, and milk together and boil 10 minutes. Add sour cream and green onions boil another 2-3 min. Serve in bowls garnish with crumbled bacon and cheese.

This potato soup is a classic comfort food. Your family will love coming home to the wonderful aroma of rich and creamy homemade potato soup made with bacon or ham. (or both)

Classic Chunky Potato Soup with Bacon

Ingredients:

3 to 4 large potatoes, peeled and cut into 1" square chunks
1 onion, coarsely chopped
1 carrot, chopped into small chunks
2 stalks celery, sliced into 1/4 to 1/2" pieces
1 can evaporated milk
2 to 3 cups milk
Salt and pepper to taste
6 to 8 slices bacon, cooked crisp and crumbled
1/2 to 1 teaspoon parsley

Procedure:

  • Cook the potatoes, onion, carrots and celery in a small amount of water in a covered soup pot until tender.
  • Add the evaporated milk, the regular milk, and salt, pepper and parsley.
  • Add the crumbled bacon.
  • Simmer slowly for 20 to 30 minutes, scraping the bottom occasionally to prevent sticking.

*Delicious served with hot cornbread.
*If you like your soup less chunky, just cut the vegetables into smaller pieces and mash them when they're cooked.
