You usually eat the root (the round red part) but the greens are also eaten quite often. The greens can be cooked like kale or turnip greens and the roots can be baked or boiled like potatoes.

The bulb for sure, I'm not quite sure about the leaves. Cut off the bottom root (the long string looking thing at the bottom of the beet) and cut at the crown (a little bit down from the place where the stem of the leaves are attached). you can do a lot of things with beets. They are very versatile. I suggest using rubber or plastic gloves and older clothes that you don't care if they get stained while cleaning beets because the red pigment is very tough to get off.
