Food sanitation, especially when working with raw meats, is crucial. Raw poultry products and eggs can be especially dangerous because of the risk of salmonella contamination. Never use a cutting board, knives, utensils, etc. after being in contact with raw chicken -- always wash them in dishwashing liquid and the hottest water possible, scrub cutting boards well, and preferably, put everything in the dishwasher on the hottest setting possible to avoid contamination.
