Plantains are firmer and have a lower sugar content than bananas. Also, plantains are starchy and can be cooked and eaten like a potato when unripe (green). When overripe, plantains are sweet. Bananas are mostly eaten raw and are much sweeter.

According to Wikipedia:

"There is no formal botanical distinction between bananas and plantains, and the use of either term is based purely on how the fruits are consumed."
