I am not entirely sure, but I believe that Kebab meat is made into small cubes or chunks of the meat to put on the Kebab stick. Gyros meat is cut into small, thin slices and is traditionally made with lamb to put into the gyro.

Tikka is a dish prepared by grilling the pieces of chicken or paneer or meat on charcoal (without keeping the pieces directly on coal, but in heat of coal) or traditional tandoor while bhuna means to cook or grill something by putting it directly on coal.To grill tikka, the pieces of (lets say) marinated paneer are hanged above burning coal with the help of rod. The distance between burning coal and paneer pieces is approx 10-20cms depending upon the heat required.Bhuna means to grill something by directly placing it on burning coal.
