Kobe beef is a Japanese dish of beef from Wagyu cattle, which is a breed that is developed and raised in Japan. Cattle are not grazed because there are very limited grazing areas in Japan, unlike here in North America. Instead, with the higher availability of grain, cattle are kept in stalls and fed a high-concentrate diet, and, though this may be hard to believe for some, are indeed fed beer and given a massage every day. It is these factors combined that make the beef from these cattle be so high in fat and tender.
