It's a loaf of soft bread, usually containing eggs in addition to the usual familiar
ingredients of bread.
The word is taken from the Hebrew, originally meaning the portion of dough that
was separated and donated in support of the priests of the temple and their families.
With no Holy Temple for roughly the past 1940 years, Jews now separate and burn
a small portion of their dough before baking the rest, in recollection of the commandment
to separate from the dough for the support of the temple and its priests (Cohens).
Challah, along with the Challah board, and the Challah cover, symbolise the manna which the Jews received while they were in the desert for 40 years. On the Sabbath evening, the Jews would receive a double portion, so that they would not have to collect on the Sabbath day. That is why they have two challahs. There is a challah board, which is something under it, to represent the dew that fell underneath the manna, and the challah cover represents the dew that fell on top.
As no leavened products are eaten over Passover, challah is not eaten during this holiday. Instead, we eat unleavened matzoh, which symbolizes the haste with which the Israelites prepared to leave from Egypt (Exodus ch.12).
Challah is the bread that is eaten on Shabbos (Sabbath). It is customarily braided and often is glazed with egg before baking. The Challah symbolizes the Manna that the Israelites ate in the wilderness. Two loaves are placed on the table at each Shabbos meal, symbolizing the double portion of Manna (Exodus ch.16).
