Top Loin, T-Bone, Porterhouse, Filet Mignon
Grilling, searing or broiling.
Premium cuts are rib or loin roasts, but standard faire is a shoulder or rump.
Upper Half * Chuck - one of the most common sources for hamburger. * Rib - Short ribs, rib eye steak. * Short Loin - from which porterhouse steaks, and filet mignon, the most tender, are cut. * Sirloin - less tender than short loin, but more flavorful. * Round Lower Half * Brisket - often associated with barbeque beef brisket. * Shank - used primarily for stews and soups, but is not usually served another way, due to it being the toughest of the cuts. * Plate * Flank
The sirloin itself comes from the loin part of the animal, which is split into Short Loin and Sirloin, which is the part right before the round or leg (not the shank, which encompasses the front legs) on a beef carcass. It starts at the tail-head and runs to the tip of the hook of the pelvis and ends at the flank and the tip of the carcass. Please see the related link below for a detailed picture of the parts of a beef carcass.
It comes from the back of the ribs of a cow thats what makes it so tender and juicy and also EXPENSIVE!
A loin is a part of the body and a particular cut of meat. As a body part the chest is bigger than the loin, as cut of meat a side of beef is bigger than a loin of beef.
